Step-by-Step Method

  1. Prepare the lamb — Remove from the fridge 30 minutes before cooking to reach room temperature. Preheat the oven to 180°C (fan 160°C).

  2. Season & marinate — Using a small knife, make incisions in the lamb and insert slices of garlic and rosemary sprigs. Rub the meat with olive oil, lemon juice, salt, pepper, and cumin.

  3. Roast to perfection — Place the lamb on a roasting tray, cover loosely with foil, and cook for 1 hour 45 minutes (medium) or 2 hours (well-done).

  4. Rest before carving — Remove from oven and rest under foil for 15–20 minutes. This allows the juices to redistribute, ensuring tenderness.

  5. Serve & share — Slice and serve with your favourite sides — from golden roast potatoes to fragrant rice or mint-infused gravy.
