Halal Argentinian-Style Rib for Two

Ingredients:
- 500-600g Halal beef ribs
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon dried oregano
- Chimichurri Sauce:
- 1/4 cup finely chopped parsley
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon finely chopped shallots
- 1-2 cloves garlic, minced
- 1/4 teaspoon chilli flakes
- Salt and pepper to taste
Instructions:
- Prep Ribs: Preheat your oven to 150°C (300°F). Rub the ribs with olive oil and season with garlic, salt, pepper, smoked paprika, cumin, and oregano.
- Cook: Place the ribs in a roasting tray and cover with foil. Roast for about 1.5 to 2 hours, or until the meat is tender and falling off the bone.
- Chimichurri Sauce: While the ribs are roasting, prepare the chimichurri by mixing together parsley, olive oil, vinegar, shallots, minced garlic, chilli flakes, and seasoning with salt and pepper. Set aside for the flavours to meld.
- Serve: Once the ribs are cooked, let them rest for a few minutes before serving. Serve with a generous drizzle of the chimichurri sauce.
