Halal Beef Meatballs in Tomato Sauce

Serves: 2

Cooking Time: 30 minutes

Ingredients:

  • 400g Halal beef mince (20% fat)
  • 1 medium onion, finely chopped (half for meatballs, half for sauce)
  • 2 cloves garlic, minced (one for meatballs, one for sauce)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 large egg, beaten
  • 50g breadcrumbs
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)
  • 2 tablespoons olive oil
  • 1 can (400g) chopped tomatoes
  • 1 teaspoon sugar (to balance the acidity of the tomatoes)
  • 1 teaspoon dried oregano
  • 250ml water or Halal beef stock

Instructions:

  • Make the Meatballs:
      • In a large bowl, combine the beef mince, half the onion, one minced garlic clove, cumin, paprika, salt, pepper, egg, breadcrumbs, and chopped parsley. Mix until just combined.
      • Form into small meatballs, about the size of a golf ball.
  • Brown the Meatballs:
      • Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the meatballs in batches, browning on all sides. Remove and set aside.
  • Prepare the Tomato Sauce:
      • In the same pan, add another tablespoon of olive oil. Sauté the remaining onion and garlic until soft.
      • Add the chopped tomatoes, sugar, oregano, and season with salt and pepper. Add water or beef stock and bring to a simmer.
  • Cook the Meatballs in Sauce:
      • Return the meatballs to the pan, coating them in the sauce. Cover and simmer on low heat for about 20-25 minutes, or until the meatballs are cooked through.
      • If the sauce thickens too much, add a little more water or stock to reach your desired consistency.
  • Serve:
    • Sprinkle with fresh parsley before serving. Enjoy your meatballs with a side of pasta, rice, or crusty bread to soak up the delicious sauce.
