Halal Beef Meatballs in Tomato Sauce

Ingredients:
- 400g Halal beef mince (20% fat)
- 1 medium onion, finely chopped (half for meatballs, half for sauce)
- 2 cloves garlic, minced (one for meatballs, one for sauce)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 1 large egg, beaten
- 50g breadcrumbs
- 2 tablespoons fresh parsley, chopped (plus extra for garnish)
- 2 tablespoons olive oil
- 1 can (400g) chopped tomatoes
- 1 teaspoon sugar (to balance the acidity of the tomatoes)
- 1 teaspoon dried oregano
- 250ml water or Halal beef stock

- Make the Meatballs:

- In a large bowl, combine the beef mince, half the onion, one minced garlic clove, cumin, paprika, salt, pepper, egg, breadcrumbs, and chopped parsley. Mix until just combined.
- Form into small meatballs, about the size of a golf ball.

- Brown the Meatballs:

- Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the meatballs in batches, browning on all sides. Remove and set aside.

- Prepare the Tomato Sauce:

- In the same pan, add another tablespoon of olive oil. Sauté the remaining onion and garlic until soft.
- Add the chopped tomatoes, sugar, oregano, and season with salt and pepper. Add water or beef stock and bring to a simmer.

- Cook the Meatballs in Sauce:

- Return the meatballs to the pan, coating them in the sauce. Cover and simmer on low heat for about 20-25 minutes, or until the meatballs are cooked through.
- If the sauce thickens too much, add a little more water or stock to reach your desired consistency.

- Sprinkle with fresh parsley before serving. Enjoy your meatballs with a side of pasta, rice, or crusty bread to soak up the delicious sauce.
