Description
Handmade minced beef parcels wrapped in caul fat. The delicate lattice renders as they cook, self-basting the meat for a juicy centre and lightly crisp outside.
Ingredients (typical)
Beef (minced), onion, herbs, spice blend, salt, pepper, caul fat.
Allergens: none by default. (If a binder is added: breadcrumbs/egg → gluten, egg.)
How to cook (home guide)

Oven: 200 °C (fan 180 °C), lined tray, 18–22 mins until piping hot (≥75 °C) and lightly crisp.

Pan → oven: Sear 1–2 mins per side, then finish 8–10 mins in the oven.

Grill/BBQ: Medium-high heat 3–4 mins per side; move to indirect heat to finish.
Do not remove the caul fat — it renders and protects the meat.
