A fresh, raw rolled lamb roulade spread with basil pesto, then hand-tied for an even cook. Ideal for a special roast you finish at home. Sold per kg (made to order).

Typically prepared from lamb cuts, trimmed, spread with basil pesto, rolled and tied.

Ingredients (classic pesto version)
Lamb (100%), basil, olive oil, halal hard cheese (microbial/vegetarian rennet), pine nuts, garlic, salt, pepper.
Allergens: nuts (pine nuts), milk. Nut-free or dairy-free pesto available on request.

How to cook (home guide)

1. Bring to room temp for 30–45 mins.

2. Sear in a hot pan with a little oil, 2–3 mins per side.

3. Roast on a rack at 180 °C (fan 160 °C) until done:

   • Aim for ≥75 °C in the centre for minced/rolled fillings, or cook until no pink and juices run clear.

4. Rest 10–15 mins; slice across the grain.
   Tip: Add a splash of stock to the tray for a quick pesto-pan gravy.
