Description
A fresh, raw rolled beef roulade spread with basil pesto, then hand-tied for an even cook. Ideal for a special roast you finish at home. Sold per kg (made to order).
Cut & build
Typically prepared from Topside / Rump cap (Picanha) / Sirloin flap, trimmed, spread with basil pesto, rolled and tied.
Ingredients (classic pesto version)
Beef (100%), basil, olive oil, halal hard cheese (microbial/vegetarian rennet), pine nuts, garlic, salt, pepper.
Allergens: nuts (pine nuts), milk. Nut-free or dairy-free pesto available on request.

How to cook (home guide)

Bring to room temp for 30–45 mins.

Sear in a hot pan with a little oil, 2–3 mins per side.

Roast on a rack at 180 °C (fan 160 °C) until done:

Aim for ≥75 °C in the centre for minced/rolled fillings, or cook until no pink and juices run clear.

Rest 10–15 mins; slice across the grain.
Tip: Add a splash of stock to the tray for a quick pesto-pan gravy.
Servings guide
Plan 220–250 g raw per adult. As a guide, 1 kg serves ~4.
