Classic Halal Chateaubriand with Béarnaise Sauce

  • Preparation Time: Approximately 30 minutes. This includes preparing the beef, making the Béarnaise sauce, and prepping any sides or garnishes.
  • Cooking Time: 20 minutes for the beef to reach medium-rare, plus resting time. The Béarnaise sauce will take roughly 20 minutes to prepare alongside.

 

Ingredients:

  • 500g halal beef tenderloin, centre-cut
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 sprigs of fresh thyme

For the Béarnaise Sauce:

  • 3 tbsp white wine vinegar
  • 3 tbsp dry white wine (ensure it’s a non-alcoholic, halal-certified option)
  • 2 shallots, finely chopped
  • 3 egg yolks (from halal-certified eggs)
  • 1 tbsp water
  • 200g unsalted butter, melted (ensure halal-certified)
  • 2 tbsp fresh tarragon, chopped
  • Salt and freshly ground black pepper, to taste

Instructions:

  • Prepare the Beef : Preheat your oven to 200°C (392°F). Season the beef generously with salt and pepper. Heat olive oil in a skillet over high heat. Sear the beef on all sides until golden brown, about 2-3 minutes per side. Add thyme to the skillet, then transfer the beef to a roasting tray and roast in the oven for 15-20 minutes for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.
  • Make the Béarnaise Sauce: Combine vinegar, white wine, and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced by half. Strain the reduction into a heatproof bowl, discarding the shallots. Add egg yolks and water to the reduction, whisking until smooth. Place the bowl over a pot of simmering water (double boiler method) and continue whisking vigorously until the mixture thickens. Slowly drizzle in the melted butter, continuing to whisk until the sauce is thick and creamy. Stir in chopped tarragon, and season with salt and pepper. Keep the sauce warm until serving.
  • Serve: Slice the rested beef into thick medallions. Arrange the slices on warm plates and drizzle with the Béarnaise sauce. Serve immediately with your choice of sides, such as roasted vegetables or a fresh salad.
