Classic Pan-Seared Halal Beef Fillet Steak

  • Preparation Time: About 10 minutes. This includes getting your steaks to room temperature, seasoning them, and having your herbs and butter ready for the pan.
  • Cooking Time: Approximately 8-10 minutes for searing the steaks to medium-rare, plus an additional 5-10 minutes for resting. Total time from pan to plate is around 20 minutes, give or take.

Ingredients:

  • 4 halal beef fillet steaks (about 200g each, 3-4cm thick)
  • 2 tablespoons of olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons of unsalted butter
  • 4 garlic cloves, lightly crushed
  • A few sprigs of fresh thyme
  • A few sprigs of fresh rosemary

Instructions:

  • Prep the Steaks: Remove the steaks from the fridge about 30 minutes before cooking. This brings them to room temperature for even cooking. Pat them dry and season both sides generously with sea salt and freshly ground black pepper.
  • Heat the Pan: Place a large, heavy-based frying pan (preferably cast iron) over medium-high heat. Add the olive oil and let it get hot.
  • Sear the Steaks: Place the steaks in the pan, ensuring they’re not touching. Sear for about 3-4 minutes on one side, until a golden crust forms. Flip and sear the other side for another 3-4 minutes for medium-rare, or cook to your preferred doneness.
  • Add Flavour: Halfway through cooking the second side, add the butter, garlic, thyme, and rosemary to the pan. As the butter melts, tilt the pan slightly and spoon the buttery, herby mixture over the steaks repeatedly for an extra flavour boost.
  • Rest the Steaks: Remove the steaks from the pan and place them on a cutting board or a plate. Tent loosely with foil and let them rest for about 5-10 minutes. Resting allows the juices to redistribute throughout the steak, ensuring it’s moist and tender.
  • Serve: After resting, slice the steaks against the grain or serve them whole. Drizzle over any buttery juices left in the pan for an added touch of richness.

Now, for the nutritional breakdown per serving, keeping in mind that this is a rough estimate:

  • Calories: Approximately 500 kcal
  • Protein: About 45g
  • Fat: Roughly 35g (including 15g of saturated fat from the butter and the marbling of the steak)
  • Carbohydrates: Negligible, as this dish is primarily protein and fat

Remember, these figures can vary based on the exact size of your steaks and the amount of butter used. Always adjust portions to suit your dietary needs and consult with a nutritionist for personalized advice.
