Halal Short Ribs for Two

Serves: 2
Preparation Time: 20 minutes (Plus marinating time: 4 hours to overnight for the best flavour)
Cooking Time: 2.5 to 3 hours

Ingredients:

  •  Halal beef short ribs (about 500-600 g)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce (Make sure it’s Halal-certified)
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 cup beef broth (Halal-certified)
  • Fresh herbs (like thyme or rosemary) for garnish

Instructions:

  1. Marinate: In a large bowl, combine olive oil, garlic, ginger, soy sauce, brown sugar, smoked paprika, salt, and pepper. Add the short ribs, ensuring they are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.
  2. Preheat Oven: Preheat your oven to 150°C (300°F).
  3. Sear: Heat a heavy, oven-proof pot over medium-high heat. Remove the short ribs from the marinade (reserve the marinade) and sear them on all sides until golden brown.
  4. Braise: Add the reserved marinade and beef broth to the pot. Bring to a simmer, then cover and transfer to the oven. Braise for about 2.5 to 3 hours, until the meat is tender and falls off the bone.
  5. Serve: Garnish with fresh herbs and serve hot, ideally with a side of mashed potatoes or steamed vegetables.
